Chickpea and Vegetable Fritters

Sometimes, I crave falafel. Or curried lentils. Really, I’m just craving something savory and garlicky made from beans.

I don’t live near any middle-eastern or Indian restaurants, so I can’t just run to the corner order falafel. Or anything that’s not a hamburger, really. Also, I’m cheap, and I enjoy cooking at home.

Today, I had all the ingredients for this recipe on hand. That’s no coincidence – I made it up because I had all these ingredients.

And, holy cow, I could live off of these fritters.

You could put them in a pita like falafel, or just eat them on a plate. Either way, they’re delicious. They’re also inexpensive and pretty darn easy. You can combine all the ingredients ahead of time and refrigerate until it’s time to fry the fritters, or mix it all up right before it’s time to cook.

1 15.5 oz. can chickpeas
2-3 cloves garlic, minced
1 Tbs. cumin
1 tsp. curry powder
dash salt and pepper
1 tsp. dried oregano
1/2 jalapeno pepper, sliced or chopped
Olive oil

1 cup corn kernels (fresh, frozen or canned)
1/4 red or yellow bell pepper, chopped finely
1/8 onion, chopped finely

1 egg, beaten
1/2 cup flour

Oil for frying

Combine first 7 ingredients in food processor with a drizzle of olive oil. Chickpeas should still be a little chunky when you finish. DO NOT blend into a paste.

Transfer to medium bowl. Add corn kernels, bell pepper and onion. Stir to combine.

Add egg, and stir to coat. Add flour, a little bit at a time, until combined.

Heat a small amount of oil in a pan over medium heat. I used coconut oil, because I’m out of vegetable and peanut oil, and olive oil isn’t very good for frying.

With your hands, make palm-sized patties. Fry until golden, 2-3 minutes per side.

How to Make it Your Own: While I recommend keeping the corn, feel free to change the other vegetables you add. Just make sure they’re finely chopped. This recipe would be a great way to use up little bits of leftover cauliflower, broccoli, peas, carrots, and just about anything else. Add a tiny bit of sweet potato or avocado in the food processor stage if you’d like.

Of course, if you want more or less spice, adjust your spices and the amount of jalapeno pepper in the recipe. Add different herbs for a different flavor.
